Begin with color and weight. Holm Oak is pale — cream to a pale pink or light tan, with heartwood only slightly deeper than the sapwood, so it lacks the strong dark-to-light contrast of many oaks. What most quickly betrays it is heft: for a pale oak it is strikingly heavy and hard, resisting a thumbnail press far more than red or white oak. If a pale, fine-grained oak feels unexpectedly dense in the hand, holm oak is a strong candidate.
Read the grain and rays. The texture is fine to medium and more uniform than deciduous oak, because the evergreen tree lays down less sharply zoned growth rings — the bold, open band of large early-wood pores that makes red and white oak so obviously 'oaky' is muted or absent here. Look instead for the medullary rays: like all true oaks it has them, and on a quartered face they throw a silvery ray fleck, but the flecks are smaller and finer than white oak's tall, dramatic rays. Check the end grain with a lens. True oaks show large rays crossing the growth rings; in holm oak the pores are smaller and more evenly scattered rather than concentrated into a coarse early-wood ring, giving a semi-ring-porous to nearly diffuse look. This even pore distribution, combined with obvious rays, separates it from the classic ring-porous end grain of white and red oak. Freshly cut oak has a mild sour-tannic smell; wetted or iron-stained spots blacken because of the high tannin content, another oak confirmation.
The usual confusions are with other oaks. White oak is a similar pale-to-tan color but is lighter in weight, distinctly ring-porous with a bold early-wood pore band and much larger ray fleck, and its pores are tyloses-plugged. Red oak tends pinker and coarser with very open, visible pores you can often see straws in on the end grain — again lighter and softer than holm oak. European (English) oak is warmer brown, softer, and clearly ring-porous. Away from the oaks, sweet chestnut mimics oak's ring-porous look but has almost no visible rays, so the presence of ray fleck plus the unusual density points back to holm oak. Origin helps too: pale, very hard, fine-grained oak from the Mediterranean is far more likely to be holm oak than a northern white or red oak.
