The end grain is the most decisive test. Elm is ring-porous, so each growth ring begins with a row of large earlywood pores you can see with the naked eye. The giveaway for elm specifically is the latewood pore pattern: the smaller pores are arranged in wavy, wandering bands or clusters (often described as squiggly or wormy tangential lines) rather than the straight radial flame-shapes seen in oak or the simple rows in ash. Under a lens the rays are fine and not conspicuous.
